Strawberry Cheesecake Tart

Have you noticed how beautiful the strawberries look at the market?  Pick up a bushel and try my Strawberry Cheesecake Tart, it’s almost too pretty to eat but oh so scrumptious!

Strawberry Cheesecake Tart

Crust

1 ½ cups crushed graham crackers

¼ cup pecans finely chopped

½ cup sugar

6 tablespoons butter, melted

Filling

1 8-ounce package cream cheese

½ cup sour cream

2/3 cup brown sugar

1 teaspoon lemon zest

1 teaspoon vanilla

Topping

1-pound package of fresh strawberries

Prepare the crust by mixing all of the dry ingredients in a bowl very well.  Add the melted butter and stir to combine.  Pour the mixture into the bottom of an 8-inch pie plate and press along the bottom and up the sides.  In a separate bowl, mix filling ingredients and whip with a handheld mixer until mixed well.  Pour the filling into the prepared crust and chill for 1 hour to overnight.  Before serving, prepare berries, by washing, hulling and cutting them into thin slices.  Arrange the strawberry slices over the top of the filling.  Cut the tart and serve.
