Making Raspberry Compote over Brie is really easy. Just brown nuts in butter and add raspberry jam, the zest and juice of an orange, dried cherries and a few drops of vanilla and you have something really special. Pour the compote over room temperature cheese and serve it with French bread or crackers and you will have a happy crowd!
Raspberry Compote over Brie
1 brie wedge
2 tablespoons butter
1 sprig fresh rosemary plus more for garnish
¼ cup raw walnuts, chopped
¼ cup raw pistachios
¼ cup seedless raspberry jam
¼ cup dried cherries
Juice and zest of 1 orange
½ teaspoon vanilla
Pinch salt
In a small sauce pan melt the butter over medium heat. Add the nuts and rosemary and cook for 1-2 minutes until nuts are brown. Add remaining ingredients to saucepan and simmer slowly until mixture is thick. Remove rosemary and pour over room temperature cheese and serve.
