Mojito Friday!

Our Friday nights generally consist of fajitas and mojitos at Mi Cocina, we are truly creatures of habit.  Our Friday nights lately, have included curbside pick-up and homemade cocktails. Since I love mojitos so much, I thought I’d share my recipe.

Mojito

Cocktail

2 ounces clear rum

1/2 small lime, cut into wedges

2 teaspoons-1 tablespoon sugar

4-5 mint leaves

Club soda

Ice

Garnish

1 lime wedge

Sprig of mint

Extra sugar

In a cocktail shaker, mix sugar, lime wedges, rum and mint.  Muddle the mixture well, pressing just hard enough for the limes to render their juice.  Stir well to allow sugar to dissolve.  Add ice and shake well.  Garnish the glass by rubbing the rim with the lime and press the moistened glass into a shallow dish filled with sugar.  Pour cocktail into the glass, add more ice if desired and top with club soda.  Stir well and add lime and mint as a garnish.
