Cool and creamy, my Mint Chocolate Chip Ice Cream is the stuff dreams are made of. Fair warning a batch of this in your freezer when the temperatures are hovering around 100 degrees, is impossible to resist!
The truth is, I’m not a huge ice cream fan. If it’s not chocolate almond, generally I’m not interested.
My son was home visiting and we had lots of milk and cream in the refrigerator so we started playing around with ice cream flavor combinations and this one is truly a winner! The best part is just how simple it is to make!
Mint Chocolate Chip Ice Cream
2 cups whole milk
2 cups heavy cream
1 cup sugar
1 teaspoon good quality peppermint extract
½ teaspoon vanilla extract
½ teaspoon salt
4-ounce bar dark chocolate
In a heavy bottomed saucepan, mix milk, cream, sugar and salt and heat over low to medium heat until sugar is dissolved. Remove pan from heat and pour into a ceramic bowl. Stir in extracts, cover with plastic wrap and refrigerator overnight. Using a vegetable peeler, pressing against chocolate bar, make about 1 cup of fine chocolate shavings. Add the chocolate to the milk mixture and pour into chilled ice cream maker. Process for 20-40 minutes until ice cream is firm. Spoon into a plastic container and place in the refrigerator for 4 hours or overnight.
