Now let’s get to the fascinating story of the Kir Royal, one of the most elegant and chic cocktails on the planet.

The history of the Kir Royal and a cooking class

It all started during the Nazi occupation of France. This was a very turbulent time, to put it mildly. As World War II raged on, food AND wine became more and more scarce. The Nazis confiscated all of the best stuff for themselves and left almost nothing for the starving French masses.

Cantor Felix Kir, a Catholic Priest, was part of the French Resistance. A hero in his own right for leading the escape of many French citizens held in war camps in the Burgundy region to freedom.

As the Nazis marched in they took all of the famed red Burgundy wine leaving behind only the less famous white wines of the region. As a show of defiance, Cantor Kir is said to have added crème de cassis to the white wine that remained so that it looked like the red they were accustomed to drinking and what do you know, it was pretty good! This beverage is simply called a Kir as a namesake for the French legend.

Sparkling white wine called Crémant de Bourgogne and crème de cassis, black currant liquor is also produced in the Burgundy region. The legend goes that several years later the practice of adding crème de cassis, to champagne or Crémant de Bourgogne became known as the Kir Royal.

The Kir Royal definitely holds its place at the French table. L’Apero is the term for light appetizers and a cocktail often taken on the way home from work at a local cafe. The L’Apero is a fashionable affair and at the best places, a simple Kir Royal is served with 2-3 morsels to be enjoyed along with, at no extra fee.

In the upcoming cooking class, Bottomless Kir Royals and Canapés we will fashion our own French L’apero and will feast on goodies!

On *** Thursday, May 26th, 6:30-8:30, join me for Bottomless Kir Royals and Canapés, a truly unique culinary event. We will cook together to create the most delectable canapés you can imagine and will experience the ultimate L’apero- cocktail hour as only the French can do.  You’ll see just how easy it is to master an elegant affair for your friends and family while many stories of Parisian cocktail hours are shared.  The best part?  Your glass will never be empty!

We will declare victory as we wind our way through this menu of luxurious morsels, beginning with irresistible Herbed Goat Cheesecake with Peppered Basil Peaches. Next up, Rosemary branches will be our skewers for indulgent Rosemary Filet Mignon, so pretty on a plate.  The fun will continue with cute as buttons, Savory Parmesan Prosciutto Madeleines. I’ll share all my secrets for how to smoke salmon as we prepare Smoked Salmon Pate with Dill.  Beautiful Brie and Berry Toasts, almost too pretty to eat, will round out the feast.  We’ll feel triumphant with a final nod to France with delectable Crème Brûlée, sweet!  Class Fee $79.00
