I love salads, how about you?

This Second Summer Salad is ideal for days like today. There is a distinct hint of fall in the air but the sun is still high in the sky making it quite warm here in Texas.

Soon we will be in the official cooking season so let’s have one more easy salad before the serious business of holiday cooking and eating sets in.

Second Summer Salad

To make this gorgeous salad, start by placing a healthy bed of greens as the base in a large shallow bowl. Place all the other ingredients in sections over the top of the green. Then just pour on the White Wine Vinagertette and you will be so happy to ring the dinner bell.

8 cups of salad greens

2 ripe Avocados cut into large chunks

2-3 ears of corn, grilled and cut from the cobb

8 strips of bacon cooked crisp and crumbled

1/2 cup blue cheese crumbles

1 large cucumber cut into large chunks

1 ½ cups ripe cherry tomatoes

1/2 cup chopped green onions white and greens

2 large roasted chicken breasts cut into cubes

White Wine Vinaigrette

1 shallot minced

¼ cup white wine vinegar

1 teaspoon Dijon mustard

1 teaspoon honey

¼ cup olive oil

Salt and pepper to taste

Place a bed of greens in the bottom of a shallow salad bowl.  Place all remaining ingredients in a pattern on top. To make the vinaigrette, put all ingredients in a jar and shake well.  Pour the vinaigrette over the salad and serve at once.
