Cran-stachio Cookies- Part 4 Gifts from the Kitchen

This is the last post in a series of 4 Gifts from the Kitchen ideas featuring cookies. Cookies and the holidays go together hand-in-hand. Several years ago I posted all of the Fangio families favorite cookies in The BEST Christmas Cookies , check it out for lots of cookie inspiration!

For almost 20 years, I’ve been teaching a class featuring recipes that are great to make and share with friends, neighbors, and co-workers. This year it was not possible to teach the classes so I wanted to share some favorites this year and next year I’ll be back at it I am sure.

Meanwhile, if you’ve been following along, on the last 3 posts, it’s clear to see that many of my holiday recipes feature dried fruits and nuts! I hope you enjoy them as much as we do!

Cran-stachio cookies

I’m really excited to share this cookie recipe with you today. Cran-stachio Cookies feature oats in the dough which gives the cookie base lots of flavor. The pistachios give the cookie crunch and the chewy cranberries to give you an overall cookie that is sure to please.

Making the cookie is very straightforward and can be served with or without the festive garnish of a white chocolate drizzle with more pistachios and cranberries sprinkled on top.

Cranberry Cookies Gifts from the Kitchen

Cran-stachio Cookies

1 cup butter

1 cup granulated sugar

1 cup brown sugar

2 eggs

1 teaspoon vanilla

2 cups flour

1 teaspoon baking soda

¾ teaspoon salt

½ teaspoon baking powder

2 cups ground oatmeal (grind old-fashioned oatmeal in a food processor or blender)

1 cup dried cranberries

1 cup chopped raw pistachios

Garnish

½ cup white chocolate

¼ cup dried cranberries chopped

¼ cup pistachios, chopped

Preheat oven to 350 degrees.  Beat butter and sugar with an electric mixer until fluffy.  Add vanilla and eggs one at a time.  Mix the flour, soda, salt, and powder in a separate bowl.  Add gradually flour mixture to the creamed butter.  Next, add ground oatmeal slowly until fully incorporated.  Fold in the fruit and nuts and drop by spoonful on a baking sheet lined with parchment paper.  Bake for 10-12 minutes.  Once cookies are cooled, melt white chocolate in the microwave and place in a small zip-top bag.  Snip the tip and drizzle the tops of the cookies with chocolate.  Sprinkle on additional cranberries and pistachios.
