Caprese salad is always a winner. It’s so simple to make and when tomatoes are in season, there is really nothing better.
This version of Caprese has a little twist. Of course I used plenty of fresh mozzarella cheese. Loads of tomatoes, both heirloom and tiny flavor bomb tomatoes that are as sweet as candy. Basel cut in a chiffonade, plucked right from my spring garden. The platter was drizzled with good olive oil and dusted liberally with fresh ground pepper and a good amount of Fleur de Sel.
You may be asking yourself, what’s the twist? The last addition was a hearty sprinkle of balsamic vinegar pearls. When you put them in your mouth, they pop with tons of sweet acidic flavor that is the ideal finishing touch to a lovely caprese salad.
Caprese Salad
3-4 large ripe heirloom tomatoes sliced ¼ inch thick
½ cup Flavor Bomb cherry tomatoes cut in half
8 ounces fresh mozzarella cheese sliced ¼ inch thick
3-4 sprigs fresh basil
1-2 tablespoons olive oil
1 tablespoon balsamic vinegar pearls
Fleur de Sel to taste
Pepper to taste
Arrange tomatoes and cheese on a platter. Cut basil in a chiffonade and sprinkle over the dish. Drizzle with olive oil. Scatter the balsamic pearls over the dish and dust it with salt and pepper. Serve at once.
