It’s 5 o’clock somewhere! When the sun is shining brightly and the days start to warm, I began to crave one of my favorite cocktails, the Lemon 43.
For years we had a Cuban restaurant in the neighborhood and we loved to go there on the weekends. The food was wonderful but it was the cocktails that kept drawing us back.
They had a variety of rum-based cocktails including the Lemon 43. This sipping cocktail is bright, not too sweet, and ideal for sitting poolside or just enjoying with friends on a Friday night.
If you’re thinking cocktails and appetizers at home, consider my Artichoke and Cheese Appetizer or my Texas Gougeres to pair with this delicious cocktail.
Liqueur 43 is a product of Spain and is made with a combination of 43 herbs and botanicals. The result is a smooth, golden, vanilla-based sensation. This liqueur is really nice as an after-dinner drink or as the French would say, a digestive. Just serve over ice.
Lemon 43
Juice of ½ a medium lemon
1-ounce Liqueur 43
2-ounces rum
Crushed Ice
Mint sprig for garnish
Fill an old fashion glass with crushed ice. Place additional ice, lemon juice, 43, and rum in a cocktail shaker and shake vigorously. Strain liquid into the prepared glass and garnish with mint and lemon wedges. If a sweeter cocktail is desired, add more 43 or a bit of simple syrup.
