French Provencal 2 Day Workshop

Join me for a truly unique culinary event. Immerse yourself in the food and culture of Provence France in this 2 day workshop.
After traveling extensively in the Provence region; I’ll lead you through some of the most iconic and mouthwatering dishes the region has to offer. Recipes prepared with fresh from the earth ingredients, slow cooked to perfection.
In this onetime special workshop, Raspberry Macaroons will be demonstrated and tasted and to spark your excitement, a cake sized Macaroon will be tested.
We will dine together for a true French experience. Wine will be served along Pastis, a Provencal specialty. The class includes a Cheese Course each day and a special tasting of Berglingots, a boiled candy from Carpentras. Breakfast and lunch portions will be eaten together and the dinner portions will be taken home.
This course promises to improve your overall kitchen skills; French cooking is the gold standard and expertise acquired will last a lifetime.

We will begin our day with Yogurt and berries served Provencal style. You will be astounded at how rich, flavorful and easy fresh made yogurt can be. We will prepare savory Fougasse, the puffy, yeast bread of the region to be enjoyed with Green Olive Tapenade and Tomato Tapenade true snacking staples of Provence. Our lunch will be delightful Red Pepper and Blue Cheese Soufflé served alongside deconstructed Ratatouille, each guest will prepare their own for added fun! Our dinner portion will be classic and rich Bouillabaisse sure to become a family favorite. For a sweet treat I will give a nod to the Provencal navettes with my Orange Blossom and Honey Shortbread Cookies and Hazelnut, Almond and Pistachio Chocolate Shards.
Arrive 30 minutes early for the Raspberry Macaroon and Macaroon Cake demonstration. Next the breakfast fun will begin with Grapefruit and Apricot Comfiture to be served on tender golden brown Pain Perdue. You will expand your repertoire with our lunch of Braised Lamb with White Beans and Carrots a slow cooked flavor sensation. For our Cheese course today we will prepare 3 varieties of darling Goat Cheese Truffles inspired by an ancient cheese cave, visited in Saint Remy. Our dinner portions will be a dish that knows how to make an entrance, Coq au Pate, (chicken baked in pastry), my all-time favorite French dinner experience! This delightful dish will be accompanied by tender Roasted Potatoes. For a sweet finish we will prepare Walnut Pineapple Palmiers, taste our Raspberry Macaroons and congratulate ourselves for meals well cooked and enjoyed!
