Chicken Chili Blanco Recipe

Some nights you need a meal that is pure comfort and no fuss and that’s where my Chicken Chili Blanco comes in. It’s the kind of dish that comes together in minutes but tastes like it’s been simmering all day. Tender chicken and creamy white beans are so satisfying and the poblano peppers, and green chilis offer just enough warmth to make this the perfect winter comfort food. No heavy lifting- just a one-pot-wonder that fills your bowl and feeds your soul with cozy goodness.

The magic happens when fresh ingredients come in contact with the heat to create a fragrant, flavor-filled dish. Start by cooking chopped onions and poblano peppers in olive oil. Add garlic and lots of warm spices, and soon the kitchen will be filled with a rich inviting aroma that promises something delicious to come. Sprinkle the vegetables with flour, this along with the cream will give the chili body. The rest is pretty simple, just add chicken, white beans, and sweet corn and simmer until the flavors meld.

Serve this savory soup with a sprinkle of cheddar cheese, avocado, and corn chips.

Chicken Chili Blanco

2 chicken breasts, cooked and cubed

1 tablespoon olive oil

1 medium onion, chopped

1 poblano pepper, chopped

2 cloves garlic, pressed

1 teaspoon of each; onion powder, garlic powder, cumin

¼ teaspoon cayenne pepper

¼ cup flour

6 cups chicken broth

1 4-ounce can green chilis

3 15-ounce cans of Great Northern beans

1 ½ cups fresh or frozen corn

¼ cup heavy cream

Salt and pepper to taste

Garnish

Shredded cheddar cheese

1 avocado, diced

Corn chips  

Add olive oil to a large soup pot set to medium heat. Add poblanos and onion and cook for 8 minutes until they are softened. Add garlic and cook 1 minute more. Add spices and warm through, next sprinkle the vegetables with the flour and cook for 2 minutes.  Add chicken broth and green chilis mix well, and bring to a simmer for 15 minutes. Add chicken, beans, corn, and cream and warm through for 5 minutes.  Taste and adjust the seasoning and serve with cheese, avocado, and corn chips.
