Herbed Cheesecake with Caramelized Onions

I dont know about you, but I am always looking for a new scrumptious appetizer. Herbed Cheesecake with Caramelized Onions is just that treat! The fresh goat cheesecake has plenty of fresh herbs and shallots to amp up the flavor and when topped with the sweet caramelized onions, well, it’s magic! The caramelized onions are ideal for the winter months when sweet onions are still plentiful.

I love this appetizer served with crusty fresh bread and a glass of red wine. Makes for a fantastic combination, although champagne would be nice too!

Last year ago I posted a similar recipe, Herbed Goat Cheese with Peppered Peaches that based the topping is very different and will be wonderful once peaches are back in season.

Herbed Cheesecake with Caramelized Onions

Herbed Goat Cheesecake with Caramelized Onions

Goat Cheesecake

6 ounces fresh chèvre

2 tablespoons heavy cream

1 shallot, finely minced

2 tablespoons fresh basil, finely chopped

2 tablespoons fresh parsley, finely minced

2 tablespoons fresh chives, finely minced

½ teaspoon pepper

¼ teaspoon salt

Onions

1 tablespoon olive oil

2 medium yellow onions, sliced thin

Sprig fresh thyme

Salt and pepper to taste

Using a hand-held mixer, beat cheese and cream together with herbs and seasonings until light.  Line a small deep dish with plastic wrap.  Spoon cheese mixture into the dish and press firmly, cover with wrap and place in the refrigerator to chill for several hours.  Meanwhile, in a small chef’s pan, cook onions and thyme in the olive oil, allowing them to have plenty of contact with the pan.  Toss and continue to cook until they are very soft and golden in color and season to taste.  Remove cheesecake from the refrigerator and turn it upside down on the serving dish to release it from the dish, remove plastic wrap and pour onions on top.  Serve with French bread.
