Goat Cheese and Pecan Salad Recipe is a favorite at my house. The tender greens topped with sweet and chewy cherries, creamy goat cheese and the crunch of pecans makes for an incredible combination.
I make a batch of my Sweet and Spicy Pecans and toss them on top of all our salads for a sweet crunch and a bit of heat.
Making the pecans is simple. Brown nuts in the butter, add spices and brown sugar and toss to coat. Next add apple cider vinegar and cook until the mixture is very thick and mostly on the nuts. The vinegar creates that wonderful candy coating.
Place the nuts on a lined baking sheet and bake until nuts are dry to the touch.
Sweet and Spicy Pecans are great for snacking, on all your salads or even sprinkled over baked sweet potatoes.

Green Salad with Goat Cheese and Pecans
6 cups mixed greens
2 grilled chicken breasts, sliced
2 ounces Fresh goat cheese
1/3 cup Sweet and Spicy Pecans
¼ cup dried cherries
¼ cup balsamic vinegar
1 garlic clove, pressed
1 tablespoon Dijon mustard
1 tablespoon brown sugar
Pinch of both salt and pepper
½ cup olive oil
Sweet and Spicy Pecans
2 cups whole, raw pecans
3 tablespoons butter
1/3 cup brown sugar
1 teaspoon smoked paprika
1 teaspoon cumin
1 teaspoon cinnamon
½ teaspoon cayenne pepper
¼ cup apple cider vinegar
Preheat oven to 350 degrees. In a large skillet, brown pecans in butter over medium heat. Add sugar, spices and toss until pecans are coated. Add vinegar to mixture, stir over low heat until the moisture is mostly evaporated and sticky mixture is coating the nuts. Line a baking sheet with greased foil or a silpat. Pour pecans onto prepare pan and bake for 7-12 minutes until golden brown and pecans dry to the touch. Remove from oven and let cool.
