New Year’s Breakfast in Bed is the perfect way to say HELLOOO to 2021!
That’s right, it’s almost time to put 2020 in the rearview mirror and no one is happier than me, to welcome 2021.
Since large gatherings aren’t possible at this time, I thought it would be fun to look for other special ways to ring in the New Year.
Celebrate with the ones you love the most, with a New Year’s breakfast in bed that is equally stunning and scrumptious!

One of the best things about this breakfast menu is that most of the work can be done the day before, so in the morning all you have to do is put the finishing touches on and serve.
These darling Fruit Salads in jars are inspired by a breakfast I had at a charming B&B in Avignon, France. I’ve wanted to recreate them ever since and New Year’s seemed like the ideal time.
Just fill clean jars with fruit and use cord to tie on wooden forks so they are ready to go.
French Toast known as Pain Perdu in France is a lovely breakfast dish, made properly, it’s crispy on the outside and creamy on the inside. For our special breakfast we decided to make Stuffed Pain Perdu.
To make this delicious treat, just cut bread thick; 1 ½-2 inches, and cut a pocket in the center of each slice using a serrated knife. Next spread cream cheese followed by jam into the pocket. Let the bread soak in the custard mixture several minutes or overnight. Once ready, cook on the grill until browned and finish in the oven.
Frittatas are such a joy to make. The key to a fantastic Frittata is a very hot pan.
Butter your pan well; once it’s sizzling add the eggs and top with roasted vegetables and cheese. Finish the Frittata in the oven and serve as soon as the eggs are puffed and set.
Of course, no New Year’s breakfast in bed would be complete without a classic mimosa.

Individual Fruit Salad
1 cup pineapple chunks
¼ cup berries
1 tablespoon coconut
1 sprig mint if desired
Cut the orange and grapefruit into supremes. Toss all fruit together in a small bowl. Tear mint leaves into the fruit mixture if desired. Spoon fruit into glass jars.
Stuffed Pain Perdue for Two
1 small country loaf or French Boulle
2 ounces cream cheese
½ cup apricot jam
½ cup milk
½ cup cream
1 tablespoon sugar
1 teaspoon orange zest
½ teaspoon vanilla
Pinch of salt
1 tablespoon butter
1 teaspoon powdered sugar
Preheat oven to 350 degrees. Prepare the custard by mixing eggs, milk, cream, zest, sugar, salt and vanilla very well. Pour custard into a shallow dish. Cut 2 slices of bread, 1 ½-2 inches thick. Cut a slit in the top of each slice of bread, cutting to the center, to create a pocket. Open the pocket and fill with a generous amount of cream cheese and jam. Place each piece of bread into the custard mixture and allow to soak on both sides for 3-4 minutes or up to overnight. Melt butter on a grill pan set to medium heat. Cook the toast on both sides for 2-3 minutes until golden brown. Place browned toast on a parchment lined baking sheet and into the oven for 8-10 minutes to finish cooking. Dust with powdered sugar and serve with additional jam if desired.
Roasted Vegetable Frittata for Two
1 tablespoon milk
1/8 teaspoon salt
Dash freshly ground black pepper
1 cup assorted roasted vegetables
2 teaspoons butter
1 sprig fresh thyme
½ cup Gruyere cheese, shredded
2 teaspoons parmesan cheese
Preheat oven to 425 degrees. In a medium bowl, whisk eggs, with milk and salt and pepper. Melt butter in a small chef’s pan, set to medium heat, swirl the pan to coat well. Add the egg mixture to hot pan. Sprinkle the vegetables evenly over the eggs and cook for about 3 minutes. Top with gruyere then parmesan cheese, dust with thyme and place into the hot oven to cook until eggs are set about 6-8 minutes.
Tip- Frittatas can be made in a glass baking dish as well. For this method, preheat oven to 350 degrees. Grease the 4×6 baking dish with non-stick spray. Add egg mixture to the prepared dish, sprinkle on vegetables and cheese and cook for 20-25 minutes until eggs are puffed, set and browned.
1-part orange juice
Pour juice into champagne flutes, add prosecco and serve at once.
