Is there anything better than fresh vine ripe tomatoes and basil right out of the garden? Add a touch of garlic, a drizzle of good olive oil, a baguette of bread and your eating like a king in my book.
The word bruschetta actually means to toast in Italian. The key to an outstanding dish is to char, sliced bread on a hot grill pan and then rub the bread with a garlic clove.
Sometimes the simple dishes are the very best!
2-3 fresh ripe tomatoes chopped
4 tablespoons olive oil
Tuscan bread sliced thin
1 clove garlic
1 tablespoon chopped fresh basil
Fleur de sel
Mix tomatoes with olive oil and set aside. Toast bread on dry grill pan until crisping on edges, turn bread and rub the first side with garlic clove. Once crisped on both sides, remove from grill and top with tomato mixture. Sprinkle with basil then salt and serve.
