What a crazy time it’s been. Who could have expected our world to change so drastically in such a short time?

I dont know about you but baking always makes me feel great and today, I baked a batch of my super dark Homemade Brownies! The simple act of measuring, stirring and cooking that produces a tried and true outcome is comforting. Don’t have all these ingredients? No problem, reach for a boxed brownie mix, the outcome is still the same; sweet chocolaty goodness!
I understand that while we are in the midst of a pandemic, specific ingredients can be hard to come by and I want to be sensitive to that.
This is why I will be sharing my shopping strategy, developed over YEARS of teaching cooking classes in my home, with you tomorrow. This simple and effective technique will insure you get only the things you need and you will move through the grocery store at warp SPEED.
I’ve shared my homemade brownie recipe before but it is so decadent that it’s worth a second look.
Use parchment paper and kitchen twine to pack brownies up for an outdoor picnic or sharing with friends. Waxed paper, butcher paper or even paper lunch sacks can be substituted for parchment paper.
¾ cup butter
1 ½ cups sugar
¾ cup flour
¾ cup dark unsweetened cocoa powder
½ teaspoon salt
1 teaspoon vanilla
1 cup semi-sweet chocolate chips
1 cup coarsely chopped pecans
Preheat oven to 325 degrees. Spray a 9 x 13 glass
baking dish with non-stick cooking spray. Melt butter in a microwave safe bowl. Add cocoa powder to melted butter and mix well. Stir in sugar and then eggs. Add flour, salt, and vanilla and mix to combine. Add chocolate chips and nuts and spread batter into the prepared dish. Bake for 24-28 minutes until edges are beginning to brown. Let cool before slicing into squares.
